Cam, as he’s fondly known as at Spicers, spent his first ten years as a Chef in an Italian kitchen and after months of connecting with local producers and trialling one of a kind dishes the Éremo experience are exceptional. The menu is complemented by a well-travelled wine list, including some of the Hunter Valley’s best vintages and a selection of those from further a field.
